(Not so) Happy Monday, everyone!
I always have such a hard time getting out of bed Mondays, so I like to start my day with a protein, vitamin and fiber-rich breakfast. Today’s breakfast was a green smoothie and a power waffle.
My green smoothie today consisted of:
- 1/2 banana
- 1/4 cup pineapple
- 1/2 peach
- handful of spinach
- 1/2-3/4 cup almond milk
- ice to fill
This power waffle was just what I needed for my Monday morning boost. This little miracle meal takes only 5 minutes to make and will get your through the first half of your day. I used an Eggo waffle, which isn’t the healthiest choice, but they were leftover from chicken n’ waffles a few weeks back. If you’ve never tried Van’s organic waffles, I highly recommend them. My favorites are blueberry and power grain.
- 1 Waffle
- Top waffle with Greek yogurt
- Apple slices
- Spread peanut butter on apples
- Chia seeds
For snack I’m having green tea with a cup of yogurt. Lunch today will be a spinach, arugula, romaine, tomato, onion, apple and avocado salad with a piece of BBQ chicken. I’m kicking my diet and exercise into overdrive for the next two weeks because Whitney is arriving in Gainesville on the 28th and I have to show something for all this long distance competing we’ve been doing. Plus, there are beach and springs trips in the works for that week and I have a cute bikini to debut.
That’s why I’m starting Shaun T’s Insanity workout today. I’ve tried P90X and got bored with it, but Insanity promises dramatic results in 2 months as well. A few of my firefighter friends have tried this workout, and they’re always beat afterwards, so I know it’ll be more intense than what I’m currently doing. Don’t worry, I’ll still post workouts for you guys to try based on my routines. In the meantime, try this 20-minute Insanity-inspired workout from Self Magazine.
