WIAW: Birthday Edition

Yesterday was my birthday, and I fell off the health food wagon and ate some tastiness that I’ll be working off the rest of the week. (So worth it!) Monday night, I prepared a bowl of overnight oats. Into the bowl went: 1/3 cup Chobani plain non-fat Greek yogurt 1/3 cup rolled oats 1/3 cup almond milk 1/2 banana, chopped sprinkle of chia seeds I set out some frozen strawberries and peaches to defrost overnight and topped my oats with them in the morning. Quinoa Avocado Salad

Quinoa Avocado Salad with Lime Vinaigrette This is a fresh, summer salad with a base of flavorful veggies, including avocados, scallions, radishes, cilantro, and spinach. The lime dressing goes really well with the cilantro and quinoa, giving it a light, tangy taste. (I just realized that none of my bowls match. Oops!) Hit My First 5K Goal Time

How funny is it that I spent all day yesterday thinking it was Wednesday? I posted WIAW thinking I was totally ahead of the game, then went for my Tuesday run. Yep. THAT kinda week. Yesterday I hit my goal of running 5K in under 35 minutes! The best part of reaching a goal is setting new ones. The 35-minute time was just my primary goal for my first month of 5K training. Hey there! I hope you had a great weekend! My liver cleanse went well and I feel very flushed out and full of energy today. The book says it may be short lived and I’ll have to continue cleaning my liver until I’m no longer passing stones, but it’s well worth it for this awesome, refreshed feeling! As promised earlier this week, and in celebration of making it through a whole week of eating vegan, here’s the recipe for the awesome cauliflower crust pizza I made on Wednesday night. I adapted it from the Vegan Cauliflower Pizza Crust recipe I found at RawIsSexy.com when I was all out of ideas for my vegan-eats week. Vegan for a Week

It’s halfway through the week and I’m having a great hair day! What’s not to be happy about? Today is also the third day I’ve been on a vegan diet. About a week ago, I mentioned that I’m doing The Amazing Liver & Gallbladder Flush and part of the preparation is a week of clean eating.
