Lemon Chili Chicken & Shrimp With Tropical Salad

I made this awesomely flavorful and healthy dinner last night. It’s so easy and you can mix and match a ton of different vegetables for a well-rounded meal that serves 2-3. WIAW: Falling Into Good Habits

I’m really excited about the new What I Ate Wednesday theme, “Fall into good habits.” Now that my first race is only three weeks away, I’m starting to fall back into better habits that I hadn’t been doing a good job of maintaining. There is nothing I like more than a good ‘ol Mexican Fiesta every now and again. Something about tacos, guacamole and spice just make me happy. What I’ve Been Up To

Wow! It’s been almost a week since I last posted. I haven’t taken this long of a hiatus since I began blogging. Lots of typing, not so many pictures in this one. Weekend Wrapup: Good Food & Fitness

Do you ever wake up with that confused feeling on Monday morning trying to figure out if it’s still the weekend or if you have to go to work? I definitely did this morning. Fortunately, I had a satisfying, relaxing weekend to hold me over until next Friday. Friday After work, Troy and I did this 550 Killer Reps workout from BodyRock. I love the old BodyRock workouts where they only use body weight and hadn’t started using equipment like sand bags and bars yet. I’m getting the ball rolling a little late on What I Ate Wednesday this week, but better late than never, right? I skipped it last week because I’ve been forgetting to take pictures of my food, but I had some goodies this week, and they’re mostly related to WIAW’s theme of falling into good habits. Quinoa Avocado Salad

Quinoa Avocado Salad with Lime Vinaigrette This is a fresh, summer salad with a base of flavorful veggies, including avocados, scallions, radishes, cilantro, and spinach. The lime dressing goes really well with the cilantro and quinoa, giving it a light, tangy taste. (I just realized that none of my bowls match. Oops!) Tossing the avocados in lime juice and adding the mixture at the very end allows them to absorb the citrusy flavor, which really comes through in the finished product. Hit My First 5K Goal Time

How funny is it that I spent all day yesterday thinking it was Wednesday? I posted WIAW thinking I was totally ahead of the game, then went for my Tuesday run. Yep. THAT kinda week. Yesterday I hit my goal of running 5K in under 35 minutes! The best part of reaching a goal is setting new ones. The 35-minute time was just my primary goal for my first month of 5K training.
