It’s also the first day in September back to work, which means a short, jam-packed month for me. Boots, Boats, But No Beach

Monday is off to a slow start after another fun, yet exhausting weekend. Whitney’s on her way back to Colorado in a few hours, and hopefully I’ll be making the trip to see her soon. WIAW: 2-Day Cleanse and Supplements

If you took the Don’t Be A Turkey challenge, congratulations! You made it! I got through the 2 day cleanse with only a teeny bitty bit of cheating. I ate some Wasa crackers with my lunches both days since I’ve been so sick and needed the extra nutrients. Quinoa Avocado Salad

Quinoa Avocado Salad with Lime Vinaigrette This is a fresh, summer salad with a base of flavorful veggies, including avocados, scallions, radishes, cilantro, and spinach. The lime dressing goes really well with the cilantro and quinoa, giving it a light, tangy taste. (I just realized that none of my bowls match. Oops!) Tossing the avocados in lime juice and adding the mixture at the very end allows them to absorb the citrusy flavor, which really comes through in the finished product. Hey there! I hope you had a great weekend! My liver cleanse went well and I feel very flushed out and full of energy today. The book says it may be short lived and I’ll have to continue cleaning my liver until I’m no longer passing stones, but it’s well worth it for this awesome, refreshed feeling! As promised earlier this week, and in celebration of making it through a whole week of eating vegan, here’s the recipe for the awesome cauliflower crust pizza I made on Wednesday night. I adapted it from the Vegan Cauliflower Pizza Crust recipe I found at RawIsSexy.com when I was all out of ideas for my vegan-eats week.
