Gluten Free Rice Krispie Treats Recipe – In 5 Minutes

Gluten Free Marshmallow Rice Krispie Treats in 5 minutes

Let’s face it… After a LONG day at work – kid’s homework and projects – laundry – dinner and 100 other miscellaneous things, we all just want…just really NEED that late afternoon “sugar rush” to get us through the rest of the day. BUT WAIT…I’m on the DREADED gluten free diet!!! While some of us are on the gluten free diet because we want to live a healthier lifestyle, some of us are on gluten free diets due to health issues or underlying medical conditions. UGH… all of the zillion sweet things I REALLY crave are filled with the things ... Read More »

Vegan Banana Oatmeal Cookies

Hey! I hope you all had a great Labor Day weekend! You know it’s going to be a good, quick week when you have a case of the Mondays on a Tuesday. It’s also the first day in September back to work, which means a short, jam-packed month for me. Here’s what my hectic September schedule looks like: 7-9th: Miami trip 15th: Central Florida Bloggers Conference, Orlando 19th: Fit2Run fun run 27th: 5K Olive Garden Pre-Party 28th: Gainesville Beer Run 5K …and all sorts of meetings, workouts, and football events in between. And I’m getting a little ahead of myself ... Read More »

Healthy Quinoa Tacos

There is nothing I like more than a good ‘ol Mexican Fiesta every now and again. Something about tacos, guacamole and spice just make me happy. It might have something to do with the fact that they are incredibly simple to make and everyone loves them. From family dinners to friend get-togethers, tacos make for a great meal idea. So what’s the catch? Turns out store bought taco kits aren’t exactly the healthiest for you. Ground red meat and heaps of cheese and sour cream are in fact, not good for you. Not to mention, the taco shells are fried. ... Read More »

Farmers Market Finds: Union Street

Good morning! When I got back from the Central Florida Bloggers Conference this weekend, I mentioned that I’d be taking this blog in a new direction soon. One of the speakers at the conference really opened my mind up to new sources for content, and inspired me to focus on some of the amazing local things Gainesville has to offer. Instead of complaining about not having a Whole Foods or Trader Joe’s, I want to praise Gainesville for its farmers markets. We have six weekly! We may live in a small country town, but with ample land and resources surrounding ... Read More »

Labor Day Weekend Wrapup

Oh man! This 3-day weekend was a much-needed one. Every Sunday, I always have this feeling of needing just one more day to recoup after a long week, and today I finally feel like I’m caught up. And the 2nd best thing about a long weekend? The next week always seems so short! So what did I do with my 3 days off? Saturday I woke up uncharacteristically early at 8AM for a bright and early run. It took a lot for me not to go back to bed, and I was a little more motivated because I wanted to ... Read More »

Vegan Cauliflower Crust Pizza

As promised earlier this week, and in celebration of making it through a whole week of eating vegan, here’s the recipe for the awesome cauliflower crust pizza I made on Wednesday night. I adapted it from the Vegan Cauliflower Pizza Crust recipe I found at RawIsSexy.com when I was all out of ideas for my vegan-eats week. Crust Ingredients: 1 cauliflower head 3 tbsp ground flax seed 9 tbsp water 1/2 cup rolled oats (or old-fashioned oats) seasonings of your choice Toppings: marinara sauce tomatoes onions portobello mushrooms green bell peppers artichoke hearts & whatever deliciousness your heart desires   ... Vegan for a Week

It’s halfway through the week and I’m having a great hair day! What’s not to be happy about? Today is also the third day I’ve been on a vegan diet. About a week ago, I mentioned that I’m doing The Amazing Liver & Gallbladder Flush and part of the preparation is a week of clean eating. For this particular cleanse, it means: No animal products No fried foods No overeating No cold food or drinks (I didn’t know this until I read the book, but cold food and drinks actually slow down your liver function!) At the end of the ... Read More »
