Hey there! I hope you’re having a great weekend so far!
I know the weekend’s not over yet, but it’s been pretty eventful so far and there’s a storm rolling in, so no better time than now to get you all caught up.
It was absolutely gorgeous out yesterday, so Troy and I decided to hit the gym and the pool.
As we were leaving, Troy noticed a frog just chillin’ on our wall. No idea how it got in, but we had to capture it. Troy gently put a plastic container on it and I slid the little fellow off the wall to liberate him.
We set him outside expecting him to hop out, but he just sat there.
He was probably thinking it’s way too hot out.
Shaking the container didn’t help either.
Finally, he hopped out and we left for the gym. Bye little guy! Nice knowin’ ya!
Once we got to the gym, I started Week 4 of the Couch to 5K program with an interval run and surprised myself with how well I did. Here’s what my workout looked like:
Afterwards, we headed to the pool to lay out, swim, and enjoy the beautiful day.
I got the urge to swim laps and was doing really well and getting some great cardio in. Then I turned onto my back and paddled with my feet and paddled my head straight into the wall. And that was the end of my swim… because apparently these things only happen to me.
We got home and relaxed, then Troy invited me for an early birthday dinner at Chili’s. When we were leaving, guess who came out to say goodbye!
That fellow is persistent! He seemed happy just hanging out, so we let him be.
Dinner at Chili’s was great, complete with Chili’s signature cheese fries and 2-for-1 margaritas. Troy ordered a juicy bacon burger and I had the smoky chipotle chicken fajitas.
Definitely not the healthiest options, but sometimes you just want to spring for cheesy flavorful goodness. And these were probably the best fajitas I’ve ever had, topped with crispy onions and a chipotle pesto.
I took the majority home, and we ate fajita scrambled eggs for breakfast. I just tossed the leftover chicken and veggies with 3 eggs and served them on a tortilla with diced tomatoes, cheese, and guacamole.
I know it doesn’t look very appetizing, but they were even better today than last night! (Further evidence that the tastiest foods often look like mush.)
I met Brittany from Go The Xtra Mile for lunch at Bento Cafe. She just moved to Gainesville and I’m so excited to have another health blogger in town!
Bento was a win, as always. Brittany got a salmon salad and I ordered the rising sun roll, which is just a California roll with fresh salmon sliced on top.
It’s been forever since I had sushi and this hit the spot! I have a feeling this is the start of a dangerous sushi kick.
After lunch, we went over to Lollicup for boba teas. We both got taro teas with lychee jellos and they were the perfect dessert after a light, yummy lunch.
Our quick lunch somehow turned into a 3-hour chat session. Brittany’s awesome and it’s crazy how much we have in common!
Now I’m home and I plan on spending the rest of the evening simply RE-LAX-ING and anticipating the new True Blood episode.

What’s the weirdest critter you ever found in or around your home?
What are your favorite restaurant leftovers?
My weirdest critter: I’ve found lizards, crickets, and all sorts of creepy crawlies in my houses before. But I think this frog definitely takes the cake. I just have no idea how something that large got inside!
Favorite leftovers: Definitely Italian food. It’s always so good when reheated and you can add all sorts of veggies to it.
